FRENCH TOAST

I LOVE breakfast. But I grew up in a household that microwaved bacon, shaked and baked everything, and would have weekly casseroles. I would rarely look forward to meals, except French toast. My mom crushed French toast. When I started cooking plant based it was the first meal I really missed. Sure, I could still have Cinnamon Toast Crunch with cashew milk (the best milk of any kind EVER). Not even close.



Then I got my hands on JUST Egg. I didn’t think there was any way eggs could be done in a suitable plant based version. I started experimenting with scrambled. Uhhhh, it was just like the shell stuff. Smell, taste, the way it cooked. It quickly occurred to me, what if….I DUNK BREAD IN IT?!?! Of course it worked, and you are about to watch how to do it yourself. You don’t have to limit your breakfast options anymore.


When I started cooking for my friends, I joked they were eating at Bon AppePete’s. And since this is French toast, it seems appropriate to end this with…

Bon AppePete!



 

INGREDIENTS

  • Trader Joe’s French rolls (or any kind of crusty bread)

  • JUST Egg

  • Cinnamon

  • Vanilla extract

  • Earth Balance butter (or coconut oil)

  • Maple syrup

  • All the fun toppings


INSTRUCTIONS

  1. Cut bread into 1” thick slices. I stink at slicing. Do as I say, not as I do.

  2. In a mixing bowl combine half a bottle of JUST Egg, 1 tsp. vanilla extract, and 2 tsp. cinnamon (or way more). Producer Marta likes a LOT of cinnamon.

  3. Turn on burner and set to medium-low heat. Grease skillet with Earth Balance butter or coconut oil.

  4. Dip bread slice in egg mixture and place in skillet. Don’t be afraid to make a mess. I always do!

  5. Cook until golden brown on both sides. Remove from the skillet and get ready to eat.

  6. Top with maple syrup and any fun toppings of your choice. I like coconut whipped cream!

  7. Pour yourself another cider and enjoy!

Now let’s talk about cider. It’s not beer. But it is delicious. And who doesn’t love a refreshing fruity bev with their breakfast? Locust Cidery is based in Washington State with locations in Colorado and Texas. I had a stand-up show at the Colorado Locust Cider taproom and fell in love with their Chai Cider. It’s a match for the ages like peanut butter & chocolate or Harry & Ron.
